Gemistá or Greek-style stuffed vegetables is one of the most common and easy-to-prepare dishes of the gastronomy of Greece. In its origins, the Greeks preferred to eat this food in summer because it is the time when vegetables are cooler. A plate contains approximately 150 calories.

Ingredients
- 4 medium-sized peppers
- 2 tomates
- 400 g of minced meat, which can be beef or pork
- Half an onion, half a pepper and half a liter of chicken broth
- 200 g of rice
- 2 cloves of garlic
- Half a cup of white wine
- Provencal herbs
- A little pepper, salt and cinnamon
Step-by-step preparation
Here are the steps to follow to prepare a Greek-style gemista dish:
- We place the meat in a bowl and add pepper, salt, garlic, cinnamon and spices.
- We cut the upper part of the tomato, remove the pulp and seeds. We do the same with the peppers. We wash them and let them drain upside down.
- In a large pan, we prepare the filling with the onion, garlic, peppers, zucchini, carrots and other vegetables that are of our preference. Add salt and fry.
- Add the meat, rice, chicken broth and white wine to reduce.
- Once the juice is low, the mixture is ready to be used as a filling.
- We place the peppers and tomatoes in a source after filling them and put them in the oven, previously preheated to 200ºC.
- They are left in the oven for 20 minutes and, once this time has passed, our gemista dish will be ready to serve.
Variants
Some variants of the gemista change the peppers and tomatoes for courgettes and eggplants, or combine all of these vegetables.
Normally, it is accompanied with a side of French fries and is seasoned with:
- Minced garlic
- Sugar
- Sal Island
- Black pepper
- Finely chopped parsley
In some cities in Greece, they complement the filling with cheese, bacon, ham, minced red meat, mushrooms, pine nuts, raisins and hazelnuts, among others.
This meal can be served hot or cold, and can also be accompanied by lemon wedges.
