La done, Also known as fatteh, is a dish whose history begins in the ancient Egypt, specifically in the Nubian culture. Since then, it has continued to be produced, both in this country and in other nearby territories, including Lebanon, Palestine and Jordan.



Formerly, it is a dish that farm workers consumed as breakfast, since thanks to its ingredients it provides a significant number of nutrients and energy for the whole day.

To this day, it is usually prepared on special occasions, when a large number of people gather to eat, as is the case at a wedding or during Ramadan, when Muslims fast until the sun goes down.

Ingredients

To prepare this traditional Egyptian dish we will need the following ingredients:

  • 3 glasses of chicken broth
  • Water glass 1
  • 4 cloves of garlic
  • 1 kg of chicken or lamb meat
  • Half a glass of tomato sauce
  • 3 pita breads
  • 500 g of rice
  • Sal Island
  • Vinegar
  • Olive oil

If you don't want to eat meat and prefer to prepare an alternative vegan, you can substitute chicken or lamb meat for chickpeas and, in this way, prepare the so-called hummus fatteh.

Recipe

This preparation is traditionally homemade, so the way of cooking it may vary in each territory. However, these are the basic steps that are usually followed:



First, the bread is cut into pieces and put in broth for about 15 minutes. On the other hand, heat oil in a pot and add rice. After two minutes, add water and salt, and cook.

Afterwards, the garlic is minced and heated in a frying pan with oil until golden brown. Vinegar and tomato sauce are added. They can also be seasoned with other ingredients. Likewise, the meat is roasted, which in Egypt is seasoned.

Finally, the rice, bread, broth, tomato sauce and meat are placed on a tray. It is heated in the oven for 10 minutes and it is ready to serve. When eating it, one option is to add a little yogurt sauce.

There are some dishes with characteristics common to the done that are prepared in some areas of Egypt. One of them is the slices, which has among its ingredients eggplant, carrot and cumin.

Another alternative is the fattoush, a kind of salad that is served with pieces of chicken and vegetables, as well as sliced ​​and fried bread. Depending on your tastes, you can make one variety or another.
